About this deal

To continue promoting local development and ensure the sustainability credentials of its operations, Mezcal Unión will preserve its mission of supporting traditional and artisanal production processes while continuing existing relationships with agave farmers and its network of mezcal master distillers in Oaxaca. Mezcal is made from over 30 agave species, varieties, and subvarieties, in contrast with tequila, which is made only with blue agave. [20] Of many agave species that can be used to make mezcal, seven are particularly notable. [14] There is no exhaustive list, as the regulations allow any agaves, provided that they are not used as the primary material in other governmental Denominations of Origin. [21] The term silvestre "wild" is sometimes found, but simply means that the agaves are wild (foraged, not cultivated); it is not a separate variety. Internationally, mezcal has been recognized as an Appellation of Origin (AO, DO) since 1994. [13] [14] There is also a Geographical Indication (GI), originally limited to the states of Oaxaca, Guerrero, Durango, San Luis Potosí, Puebla and Zacatecas. Similar products are made in Jalisco, Guanajuato, Michoacán, and Tamaulipas, but these have not been included in the mezcal DO. [14] Mezcal Unión had also become one of the leading mezcal brands in bars and restaurants in Mexico, Diageo added. Similar to wine, each bottle reflects the unique terroir of the region where it was distilled, with each producer using their own artisan methods.

This approach has supported both the growth of the brand and of local communities and agave farmers in Oaxaca. We are proud to have delighted consumers with an excellent artisanal-craft mezcal and are confident that as part of Diageo, one of the largest and most respected spirits companies in the world, Mezcal Unión will continue to support development of the category, open doors to new markets and strengthen our brand mission.”Max Garrone. "When does a mezcal deserve to be a mezcal?". mezcalistas.com . Retrieved 8 June 2021. While fermented drinks from agave (like pulque) is pre-colonial, [10] the distillation of agave heart juice into mezcal was only introduced in the colonial era. How stills reached New Spain remains a point of scholarly dispute; some historians attribute the propagation of distillation to the Spanish who learned the process during the Moorish rule of Iberia, while others trace its origins to Filipino sailors who, after the opening of the galleon trade in the 1570s, brought stills with them to make vino de coco (coconut liquor). [11] For context, Union Mezcal represents circa 1% of the overall mezcal market and circa 0.2% when compared against the Diageo’s overall agave portfolio,” Barclays said.

Mezcal, unlike tequila, can be made from a variety of some 30 different agave variants (not just Blue Weber agave). In that sense, it can be argued that its range of flavors and styles is a little more far-reaching. Flavor-wise, mezcal is to tequila as scotch is to whisky. It’s smoky and earthy, made from the piña, or heart of the agave plant. It’s made today much like it was a couple of centuries ago, with the piña cooked for several days in pit ovens before being crushed and fermented. Mezcal Union Mezcal Union Our story with Mezcal Unión began with a distribution partnership in 2016 and we are now taking it to a new level. The mash is allowed to ferment, the resulting liquid collected and distilled in either clay or copper pots which will further modify the flavor of the final product. [5] The distilled product is then bottled and sold. Unaged mezcal is referred to as joven, or young. Some of the distilled product is left to age in barrels between one month and four years, but some can be aged for as long as 12 years. [18] [9] Mezcal can reach an alcohol content of 55%. [18] Like tequila, mezcal is distilled twice. The first distillation is known as ordinario, and comes out at around 75 proof (37.5% alcohol by volume). The liquid must then be distilled a second time to raise the alcohol percentage. The brewer has released Little Swine Low Alcohol 2.8% ABV beer on draught and bottle, and a new Little Swine 0.5% ABV bottled beer, both of which are gluten free.

The sustainability idea is two-fold: Look after the long-term well-being of the land as well as the economic status of the community responsible for the growing. It’s a decidedly gentler approach than the more popular and capitalistic technique of simply buying and clearing the land, which pushes locals out and tends to squeeze farmers financially due to a typically massive production scale.
